gooey double chocolate olive oil loaf cake with toasted hazelnuts & whipped cream


1 1/4 cups ap flour

3/4 cup coco powder

1 1/2 cups light brown sugar

1 1/2 tsp baking powder

1/2 tsp baking soda

1/4 cup chocolate chunks

1/4 cup chopped hazelnut

pinch of flaky salt

2 large eggs

1/2 cup extra virgin olive oil

1 tablespoon vanilla extract

1 cup of warm milk (i used oat milk)


first mix all of the dry ingredients, then mix all of the wet ingredients, then pour the wet ingredients into the dry and gently whisk until well combined.

pour the mix into a greased and lined loaf tin and bake for 60mins in a 350 degree oven. check for done-ness by poking a knife or toothpick into the centre of the cake. it should come out clean.

serve with some whipped cream (just plain whipped cream, the cake is sweet enough) some more chopped hazelnuts + flaky salt!
