mezcal sour

ingredients

  • 2 oz mezcal
  • 1 egg white per person
  • 1 oz fresh lemon or lime juice
  • ¾ oz of maple syrup
  • bitters for garnish 2-3 dashes
  • dehydrated citrus for some pizazz

directions

start off by cracking the egg and separating the egg white into a bowl.

juice the lime, you'll roughly get enough lime juice for 2 cocktails from each lime.

you can use sugar syrup or maple syrup, but maple syrup's good as it's way less prep.

pour the egg white, lime juice, maple syrup and a 2 oz pour of your favorite mezcal (i love vida) into a cocktail shaker. start off with no ice and shake everything together. doing this will help to create the foam.

if you don't have a cocktail shaker, you can use a jar in a pinch.

once the ingredients are well shaken together and they're looking nice and frothy, add a few chunks of ice and shake again until everything's cold.

pour through a sieve into your favorite short cocktail glass, add 2-3 dashes of angostura bitters, and if you like, add in a slice of dehydrated citrus to finish it off.
