arugula or you can use bibb, butter, little gem, romaine, radicchio, chicory
1/4 red wine vinegar, champagne vinegar or ACV
1 cup of good quality extra virgin olive oil
1 tbsp dijon mustard
1 tbsp honey
pinch of flaky sea salt
parmesan to finish
simply add everything (except the parmesan) into a jar and shake everything vigorously. set the jar aside at room temp. the vinegar will eventually break down the honey and everything will combine.
add the leaves to a large mixing bowl (and make sure it is not the bowl you plan to serve it in) + drizzle over desired amount of salad dressing and gently toss with your hands to coat all of the leaves.
a little goes long way, so start with a small drizzle! you can always add more according to your taste.
once sufficiently dressed add everything to your serving bowl of choice and grate a little parmesan over the top to serve.
it’s a simple as that! sometimes i will add some nuts and seeds depending what i am serving the salad with. but this drizzled over leaves alone, is gonna be the tastiest thing ever! i promise!
