my gazpacho


2 red peppers

2 persian cucumber or one english cucumber, peeled

half a red onion

2 stalks of celery

3 big red heirloom tomatoes or punnet of cherry tomatoes

2 garlic cloves

sherry vinegar

flaky sea salt

black pep on the big grind

extra virgin olive oil


simply blend everything together until smooth, then add more sherry vin accordingly.

i love mine quite vinegary.

serve with some homemade croutons, basil, (sometimes mint), chives and loads of extra virgin olive oil.

to make the croutons—tear up some sourdough and coat in extra virgin olive oil and salt. toss in a 350 oven for 25 minutes.
