sweet potato mash with labneh and chives

ingredients

  • 3 sweet potatoes
  • 4 garlic cloves
  • chives
  • evoo
  • labneh
  • chicken broth
  • flaky sea salt
  • black pep on the big grind

directions

get a pan of water boiling and salt accordingly (should be salty like the sea).

peel the sweet potatoes and cut each into thirds. next peel the garlic, but leave them whole.

once the water is boiling, add the sweet potato and the cloves of garlic.

keep everything on a rolling boil for 25-30 minutes, or until the potato is very soft and almost falling apart.

drain the potato and garlic mixture and add them back into the pan.

chop a large handful of chives and add to the mixture, along with one cup of labneh, a good glug of evoo, quarter of a cup of chicken broth and then season with salt pepper.

mash everything together with a potato masher, until you reach desired consistency. i prefer some small lumps, rather than it being completely smooth, it's more interesting to eat that way.

transfer everything to your favorite serving bowl, dress the potato with more chives, another glug of evoo, flaky sea salt and black pep on the big grind.

i know there are many mashed potato recipes out there, but let me assure you this one is truly insatiable.
